Ceres Distilling Co is a family owned Craft Distillery named after the hamlet of Ceres. Ceres, located close to Geelong was settled in 1830 and has a significant agricultural history.
Our name pays tribute to Ceres the Roman Goddess of agriculture who blessed the annual grain harvests. We have a long association with Ceres and the Geelong region so wanted to pay homage to our roots. At Ceres Distilling Co we distill with passion using the finest harvest ingredients environmentally and sustainably.

Our founders
Ross and Denise started this adventure with a passion for quality Australian craft spirits. They have created a space where people could learn about distilling and support local Geelong industry. Come down and see how the love put into crafting the spirits is as authentic as the Geelong distillery itself.
MODERN SMALL BATCH DISTILLING in geelong
Our stills are manufactured by I-Still in the Netherlands, the largest still manufacturer in the world. They are made from stainless steel, are water cooled and are technologically advanced compared to most stills. Our 4 stills are made by I-Still allowing us to scale up recipes precisely from test to production.
MEET OUR STILLS:
Our BIGGEST still is a 500 litre I-Still. This means it does all the heavy lifting producing our small batch craft gin range.
Our 100 litre I-Still isn't a baby but sufficiently smaller is perfect to produce our small batch craft vodka.
Finally our future product releases will come from our TINIEST stills the 10 and 5 litre I-Stills. This is where we will trial and experiment with new flavours for our future seasonal gin releases.

SUSTAINABILITY & ENVIRONMENT
Ceres Distilling Co is committed to sustainability and the environment. Our vision is a carbon neutral Distillery.
We have a 30 kilowatt solar system, consisting of 78 solar panels on our roof down in Geelong. Which allows us to run our electricity self-sufficiently and we normally generate more electricity than we consume.
Our large 500 litre still, in one run needs around 9000 litres of chilled water to operate properly. So what do we do? We recycle all of that cooling water used as well!
We do our part and use a number of our oak barrels are made from recycled timber that we use for our whiskey.
You may look at our ceiling and say wow that's a BIG ASS FAN, ITS HUGE! It's true whave installed a 6 metre diameter fan to keep the air circulating in the building assisting with heating and cooling. The fan has ionisers fitted to each blade which generates both positive and negative ions which significantly reduces the pathogens in the building after only 2 hours of operation.
To support sustainable practices we have used a number of recycled and sustainable materials in our fit out. These have included; stainless steel, plywood and panelling.
